The article is devoted to an experimental study of the physico mechanical properties of vegetable and melon crops, in particular, to the determination of the elastic modulus and Poisson's ratio characterizing the cutting process with a blade. When using mechanical methods of processing melon fruits: removing the peel, cutting the fruit into slices, removing the testis and plasticizing the dried melon, one cannot express the essence of the processes taking place at the current level of theoretical knowledge. Therefore, for a quantitative assessment of the technological properties of melons, it is necessary to resort to the experimental - theoretical method, which allows one to obtain some relative indices that make it possible to measure the elastic modulus, Poisson's ratio, breaking stress, and rest and motion friction coefficients.
