Antioksidant himoya tizimi fiziologik faol moddalarning murakkab, ko'p komponentli tarmog'i bo'lib, ketma-ket ishlaydigan, bir-birini to'ldiruvchi, shu bilan oksidlovchi reaksiyalarni boshqaradigan va turli xil toksik mahsulotlarni inaktivatsiya qiluvchi fermentativ va fermentativ bo'lmagan birikmalardan iborat. Aynan antioksidant fermentlarning muvofiqlashtirilgan o'zaro ta'siri orqali oksidlovchi jarayonlar hujayra darajasida ko'plab fiziologik jarayonlarning normal ishlashi uchun zarur bo'lgan darajada saqlanadi. ROS hosil bo'lishi va neytrallanish jarayonlari nazoratdan chiqqanda, prooksidant va antioksidant reaksiyalar intensivligi o'rtasidagi muvozanat buziladi, bu esa erkin radikal oksidlanish mahsulotlarining to'planishiga va oksidlovchi stress (OS) rivojlanishiga olib keladi. Bu turli hujayra tuzilmalariga zarar yetkazadi va biokimyoviy jarayonlarni buzadi, natijada deyarli barcha inson tizimlari va organlariga ta'sir qiluvchi doimiy patologik holatlar va kasalliklarning rivojlanishiga olib keladi.
