Managing postprandial glycemia is a key objective in the treatment of patients with type 2 diabetes mellitus (T2DM). International organizations, such as the FAO and the American Diabetes Association, recommend considering the glycemic index (GI) and glycemic load (GL) of foods to improve blood glucose control.
