КАЧЕСТВО И БЕЗОПАСНОСТЬ ЗАРАЖЕННОГО МЯСА ОВЕЦЫ ЭХИНОКОККОЗ В УЗБЕКИСТАНЕ

На продовольственном рынке Узбекистана ассортимент готовой продукции из мяса достаточно велик, но качество этой продукции разное. Сегодня контроль качества мяса и мясных продуктов очень важен на бойнях с точки зрения безопасности. Проведенные исследования мяса здоровых и эхинококкозных животных позволяют сделать вывод о том, что данное заболевание оказывает определенное влияние на некоторые параметры, определяющие качество мяса. Согласно исследованию 648 овец, забитых на бойнях в Самаркандской области Узбекистана, средняя заболеваемость эхинококкозом составила 12,8%. По органолептическим показателям мясо здоровых животных не отличается от мяса животных, больных эхинококкозом. Эхинококкоз приводит к снижению пищевой ценности мяса, что выражается низким содержанием белка и жира. Это свидетельствует о том, что при инвазии эхинококкоза в исследуемые ткани и органы показатель pH смещается в сторону щелочной реакции из-за первичного распада белка. Высокое содержание влаги в мясе животных, больных эхинококкозом, является неблагоприятным фактором, влияющим на устойчивость мяса к длительному хранению.
